As you may or not know, I post recipes on my blog from time to time, to switch things up a bit from all this teacher overload. I'm definitely no chef. When I lived on my own, I used to cook Hamburger Helper and eat it all week long! But now I'm a married woman and I'm trying out recipes and I love it! Here's the recipe I'll share today!
Chicken & Broccoli Mix
(I kind of made up the name)
I got the original recipe here, and it was for Mini Chicken and Broccoli Pies.... Mmmmmmm! I made them exactly as the recipe read last week and they were tasty! Then my husband suggested I just try it without the pot pie part the next time I cooked it.
Ingredients:
1 lb. chicken breasts (or if you're like me, the whole package of chicken)
cut into bite size pieces
1 package of frozen chopped broccoli
1/2 cup shredded cheddar cheese
1 tablespoon vegetable oil
Salt & pepper to taste
Directions:
1. Cut chicken into bite size pieces
2. Heat vegetable oil in skillet
3. Cook chicken on med-high for 10 minutes or until no longer pink, stirring occasionally
4. While chicken is cooking, cook the broccoli (I cook mine in the microwave per package directions)
5. On low heat, mix the broccoli with chicken and stir
6. Add salt and pepper to taste
7. Add cheddar cheese, turn off heat, stir together
I also made rice with it!
Yum!!!
What? You want one more recipe? OK, OK, here's one more for the linky - Parmesan Pull-Apart Bread!!
I got the recipe from Pinterest (duh!) and it was linked back to The Virtuous Wife. I changed a few tiny things with the recipe.
Ingredients:
1 can refrigerated Grands biscuits
1/2 stick of butter
3 cloves of garlic, minced (I omitted)
1/2 cup grated Parmesan cheese
1/2 teaspoon Good Seasons Italian Dressing mix
Directions:
1. Preheat the oven to 350 degrees. Place the butter stick in the bundt pan to melt while oven is preheating.
2. Cut the Grands biscuits into fourths.
3. Mix the garlic (if you choose to use it), parmesan cheese, and Italian dressing mix in a medium bowl.
4. Toss the biscuit pieces in the bowl and coat with mixture.
5. Once the butter is melted, place the coated biscuits in your bundt pan. Spread any extra crumbs from the bowl on top of the biscuits.
6. Cook in the oven for 20-25 minutes.
Let it cool, turn over onto serving tray, and ENJOY!
